Freeze-dried food is used in the same way as fresh or frozen food. In this recipe I used shredded freeze dried cucumbers, freeze dried dill, and freeze dried garlic that I powdered.
Of course, you can substitute fresh ingredients in place of the freeze dried ingredients.
INGREDIENTS
- ½ cup finely grated freeze dried or fresh cucumber
- 1 cup of Greek yogurt
- 1 tablespoon lemon juice
- ½ tablespoon extra virgin olive oil
- 1 teaspoon of freeze dried garlic or 1 clove of garlic, grated.
- ¼ teaspoon salt
- 1 tablespoon of freeze dried dill or chopped fresh dill
DIRECTIONS
- If you are not using freeze dried cucumber, place the freshly grated cucumber on a towel and gently squeeze out a bit of the excess water.
- In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, and dill. Chill until ready to use.
