When you have a recipe that is a winner every time, you stick with it.
I decided to make three different flavors of cupcakes with one cake mix (8 chocolate, 8 caramel, and 8 vanilla).
The chocolate cake used in making these cupcakes was made with adding cocoa, sugar, and sour cream to a white cake mix. You can find out how to turn a vanilla cake mix into chocolate HERE.
Of course, if you want to make a full batch of cupcakes, use this Hot Fudge Sundae recipe which adds hot fudge and chocolate pudding for that extra chocolate flavor.
For the Frosting…..
I say this with all of my frosting but you can use Crisco, butter, or a combination of the two. If you will have the cupcakes outside in the heat, the crisco will hold up better.
1 cup (2 sticks) unsalted butter (or 1 cup crisco or 1/2 crisco and 1/2 butter combo)
4-5 cups powdered sugar
1/2 cup hot fudge ice cream topping
1/4 to 1/3 cup cocoa powder
1 teaspoon vanilla extract
3 to 4 tbsp of milk or milk substitute
With electric mixer, beat butter or crisco until creamy. Add powdered sugar (4 cups) and 1/4 cocoa powder. Continue beating until sugar and cocoa are incorporated. Add hot fudge sauce, milk, and vanilla. Add 5th cup if needed to get desired consistency. (Add more creamer if too thick or more powdered sugar if too thin)
