EASY SQUASH FRITTERS WITH CHEESE

 


Squash fritters feature a delightful combination of crispy golden edges and tender, flavorful centers, ensuring each bite is a satisfying and savory delight; top with ranch dressing or use it as a dip for extra flavor.


INGREDIENTS

  • 2 cups shredded/finely chopped squash (any type)
  • 1 cup shredded cheddar cheese
  • 1⁄2 chopped onion
  • 1⁄4 cup flour
  • 2 eggs
  • 1 teaspoon salt
  • 2 teaspoons oil or enough oil to cover bottom of skillet
  • optional: ranch dressing

DIRECTIONS·   

  • Grate the squash with a cheese grater (or dice by hand) into mixing bowl
  • Add the cheese, onion and egg.
  • Mix together and then add flour until it is almost a dry mix.
  • Heat oil in skillet and drop spoon size amounts of mixture into hot grease and take spoon and flatten them to make into shape of pancake.
  • Fry until golden brown and sprinkle with salt.
  • Optional: top with ranch dressing or use as a dip for the patties.
  • Yields 12 cakes
