BUTTERSCOTCH COOKIES WITH BUTTERSCOTCH PUDDING & BUTTERSCOTCH CHIPS

 


Have you ever tried baking pudding cookies? If not, you're missing out! They're incredibly simple to whip up and consistently yield thick, soft, and chewy treats. What's great about incorporating pudding into cookies is the ability to experiment with various flavors, ensuring there's something for everyone's palate.

INGREDIENTS

  • 1 cup butter, softened
  • 1/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 (3.4 oz) pkg butterscotch instant pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 11 oz pkg butterscotch chips

DIRECTIONS
  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a baking mat and set aside.
  2. Using a mixer, beat together butter and sugars until creamy. 
  3. Once well combined, beat in egg and vanilla extract until well blended.
  4. Slowly add in flour, pudding mix, salt, and baking soda.
  5. Stir in the butterscotch chips.
  6. Drop cookie dough by rounded tablespoons onto prepared baking sheet. Bake for 10 minutes, or until slightly golden around the edges and set. Remove cookies from oven and let cool on baking sheet for a couple of  minutes. Transfer to a cooling rack and cool completely.
