INGREDIENTS
- 6 slices bacon, cooked crispy and crumbled
- 4 cups fresh, canned, or frozen corn (thawed if using frozen)
- 1/2 cup bell pepper, diced
- 1/2 cup red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1/4 cup ranch dressing
- 1/4 cup chopped cilantro (optional)
- Chili Cheese Fritos
- Salt and black pepper to taste
DIRECTIONS
- Prepare the bacon: Cook the bacon until crispy according to your preferred method (pan-frying, baking, or microwaving). Once cooked, crumble or chop it into small pieces and set aside.
- If using fresh corn, cook the corn until tender. If using frozen corn, thaw it, and if using canned corn, drain it.
- In a large bowl, combine the corn, crumbled bacon, diced bell peppers, chopped onions, tomatoes, and cheese.
- In a small bowl, mix together the mayonnaise and ranch dressing until well combined.
- Pour the dressing over the corn mixture and toss until everything is evenly coated.
- Season with salt and pepper to taste. Refrigerate. Add chili cheese Fritos just before serving.
