I always look forward to fall because I starting making recipes using pumpkin. I make pumpkin biscuits, pumpkin ooey gooey butter cake, pumpkin cookies, pumpkin cupcakes, pumpkin spice creamer, and pumpkin pancakes.
I don’t know why I wait until fall to enjoy these tasty treats since I could eat pumpkin pancakes all year long. Maybe I’ll save a couple of cans of pumpkin and make them for the fourth of July!
If you are craving some pumpkin pancakes, here is an easy recipe using Bisquick.
- 1 egg, beaten
- 1 1/4 cups milk
- 2 cups Bisquick
- 1/2 cup pumpkin pie filling
If you don't have pumpkin pie filling, you can use
- 1/2 cup canned pumpkin (not pumpkin pie mix)
- 1 teaspoon pumpkin spice mix
- Into medium-large bowl, mix all ingredients until smooth. Batter will be thick.
- Grease griddle /skillet with cooking spray or butter. Heat over medium-high heat.
- For each pancake, pour about 1/4 cup batter onto hot griddle/skillet.
- Cook until bubbles form around edges.
- Turn pancakes; cook about 3 minutes or until golden brown on bottom.
Serve pancakes with your favorite syrup or use your imagination and make your own.
I always get a little creatiave with my syrups. I either make my own from fruit or start with a purchased syrup. For my pumpkin pancakes, I started with some purchased syrup (Mrs Butterworth’s) and added brown sugar, vanilla, butter, and pecans to taste. Heat everything in a small pan until sugar and butter are melted. Server warm.
Makes about 14 pancakes.
Note: If the batter seems to thick, just add a little more milk to thin.
